Try this fun new way for making for lasagna.
Serves 4-6.
Ingredients:
- Salt
- 1/2 pound (8 to 10) uncooked lasagna noodles
- Nonstick cooking spray
- 1 cup ricotta cheese
- 1 1/2 cups prepared marinara sauce
- 1 1/2 cups packed baby spinach
- 1/2 cup shredded mozzarella
Method:
Preheat oven to 400°F. Bring a large pot of salt water to a boil. Once boiling, add noodles and cook until al dente, around 8-10 minutes. Drain and transfer to a clean work area.
Spray cooking dish with nonstick spray. Spread 2 tablespoons of ricotta and 2 tablespoons of marinara on a noodle, then top with spinach. On one end, roll the noodle tight then arrange in dish with seam-side down or with the rolled noodles close enough to hold each other together. Pour left over marinara over rolled noodles and sprinkle with mozzarella. Bake from 20-25 minutes or until golden and bubbly.
