  • Arugula
  • Cubed watermelon
  • Crumbled feta
  • Thinly chopped and stacked mint
  • Balsamic vinegar
  • Olive Oil
  • Salt
  • Pepper


  1. Arrange the salad in the order the ingredients are listed above.
  2. You can use a pre-made salad dressing or simply drizzle and sprinkle the dressing ingredients over the top.
  3. Add the dressing just before serving for the freshest, crispest salad.

Chef’s Tip: 

I don’t have ingredient amounts listed here because it really is up to you to decide your portion. You can’t blow it I promise! I often bring this salad on a big platter to potlucks. It’s super easy to throw together and it’s always a hit. My favorite thing is not telling anyone it’s watermelon. People see red on a salad and they immediately think it’s tomato. Then they taste it and the confusion begins followed by an immediate ‘Wow! This is really good!’ ” – Chef Rose Archer
