Delicious dish with whole grains, vegetables and beans. Good for the entire family!
Serves 4
- 2 – bell peppers
- 2 cups of black eans
- 2 cloves of garlic
- 1 green onion
- 1 jalapeno
- 1/2 of large onion
- 6 oz of low sodium vegetable broth
- 1 cup of cooked quinoa
- 1/4 tsp of cayenne pepper
- 1/2 tsp of chili powder
- 1/2 tsp of cumin
- 1/2 cup of low-fat mexican cheese
- 1/2 of avocado oil (you can substitute olive oil)
Pre-heat the oven to 375 degrees. In a large skillet heat oil and saute the peppers, onion, garlic and jalapeno for about 4 minutes. Stir in broth and beans and allow mixture to thicken. In a separate skillet, combine quinoa and spices and heat while tossing for about 2 minutes. Combine all ingredients in a lightly oiled 8×8 baking dish, top with cheese and bake covered with foil for 20 minutes. Garnish with green onion and enjoy.
