Delicious dish with whole grains, vegetables and beans.  Good for the entire family!

Serves 4

  • 2 – bell peppers
  • 2 cups of black eans
  • 2 cloves of garlic
  • 1 green onion
  • 1 jalapeno
  • 1/2 of large onion
  • 6 oz of low sodium vegetable broth
  • 1 cup of cooked quinoa
  • 1/4 tsp of cayenne pepper
  • 1/2 tsp of chili powder
  • 1/2 tsp of cumin
  • 1/2 cup of low-fat mexican cheese
  • 1/2 of avocado oil (you can substitute olive oil)

Pre-heat the oven to 375 degrees. In a large skillet heat oil and saute the peppers, onion, garlic and jalapeno for about 4 minutes.  Stir in broth and beans and allow mixture to thicken.  In a separate skillet, combine quinoa and spices and heat while tossing for about 2 minutes.  Combine all ingredients in a lightly oiled 8×8 baking dish, top with cheese and bake covered with foil for 20 minutes.  Garnish with green onion and enjoy.
