Try this delectable sorbet to cool down your summer. Serves 6.


  • 2 (10-ounce) packages frozen mango chunks, slightly thawed
  • Zest and juice of 1 lime
  • 2 tablespoons thinly sliced Thai basil leaves
  • 1 cup unsweetened soymilk


Pulse the mango into little pieces in a food processor. Purée lime zest, juice and basil until just combined. Slowly pour in soymilk while the food processor is running until thick and creamy. Serve immediately or freeze in an airtight container.
